Fajita Recipe


This recipe makes 15 fajitas.

2 1/2 cups cooked black beans
2 cups cooked rice
2 medium tomatoes, diced
1 1/2 lbs. ground turkey
1 small red onion, diced
1 tsp. onion powder
1 tsp. cumin
1 tsp. ginger
salt and pepper to taste
15 tortilla shells (this recipe is easy and delicious)

Brown your turkey and onion in skillet. Cook black beans. Cook rice. Mix rice, black beans, cumin, onion powder, ginger, tomatoes, salt and pepper in large bowl. Stir. Scoop out a heaping spoon full of ground turkey onto your tortilla shell, scoop a heaping spoon full of rice mixture on top of turkey. Add some mozzarella cheese. Fold in the sides, top, and bottom. (I wrap mine in aluminum foil and freeze until ready to eat. ) Warm in oven and enjoy!

  1. when you warm them in the oven, what oven temp and how long when they are frozen?

    1. I usually put them in a 400 degree oven for 10-15 mins. Enjoy :)
