Pumpkin Muffins

Notice only five muffins, I couldn't wait until the pic was taken. So yummmmy!!


Finally, no more $1.39 pumpkin muffins. It use to be my routine to stop by my local Dunkin Donuts and get a cup of coffee and a pumpkin muffin once or twice a week. Even with coupons it adds up quick. I have come up with a awesome pumpkin muffin recipe. These are very moist and bursting with pumpkin flavor.

Muffin:

3/4 cup pumpkin puree
1/2 cup white sugar
1/4 cup brown sugar
1/3 cup melted butter
1 egg
1 1/2 cups flour
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. ground cloves
1 tsp. baking soda
1 tsp. baking powder

Strudel Topping:

1/4 cup flour
1/4 tsp. cinnamon
1/4 cup brown sugar
3 tbsp. melted butter

Preheat oven to 375 degrees. Spray or line muffin pan. In a large bowl combine pumpkin puree, white sugar, brown sugar, melted butter and egg. Stir until combined. Mix in flour, salt, cinnamon, ground cloves, baking soda and baking powder. Pour into muffin pan, filling 2/3 full. In another small bowl make the strudel topping. Combine all ingredients and sprinkle on top of each muffin. Bake for 25 minutes. Makes 6 large muffins.
